I think this is already possible. If I first search for location and category THEN sign up for email alerts, I think it emails me only jobs that match my criteria. Just tried it on my jboard site:

Anson Cheung: Yes, but it would be better to have this on the starting page before the search to get subscribers directly. Even if I do the search, the sub bar still only let me choose the category:
